I know some of you will look at this photo and ask yourself, "who is that guy standing next to Angie?" Well, for me, this photo has a lot of meaning and purpose behind it. You see, I am a BIG FAN of the television show, "The Biggest Loser." I watch it each week and it has given me much needed inspiration in my journey of weight loss. I also have "The Biggest Loser Family Budget Cookbook" and love the recipes that are budget friendly. I will post some of these on my weekly recipe post.

Anyway, getting back to the photo. Some friends and I went to dinner at Chili's Restaurant on Friday night after the play at Union Grove Christian School. I was one of the last people to walk in the restaurant to meet my friends. Jeremy told me when I walked in the door that one of Nascar's race car drivers was in the restaurant. He said, "Angie, that is Clint Bowyer sitting over there at that table with those other folks." I was not sure so Jeremy pointed him out to me and I responded with, "no way, that's not Clint Bowyer." But Jeremy was insistent and even told me to walk over to the table and ask him. I did not want to interrupt and I told Jeremy that I could not do it. After much prompting and coaxing from the rest of the gang (yes, I gave into peer pressure), I walked over to the table and very apologetically asked him if he was indeed Clint Bowyer. He responded with, "yes ma'am, I am." Now, I am not a big Nascar fan and watch very few races or follow the stats, but I am a Biggest Loser fan, and on the last episode of The Biggest Loser, Clint Bowyer made an appearance. He gave the contestant that won the challenge a ride around the race track with some spin outs and she also received a trip & tickets for a race. Tara won the challenge and to see clips go to www.nbc.com and see the Biggest Loser or look at the widget on my blog. I watched the show and it was neat to see Clint Bowyer giving Tara the ride around the track. It was a big motivator especially because Tara came back from a 5th place standing to pass the other 4 contestants to win the challenge. Here's my "claim to fame" photo.

Mr. Bowyer asked me how much weight I had lost and I told him I had just topped the 50lb mark and he shook my hand and told me to keep up the good work. It was an inspiring evening and I'm glad I had the opportunity to meet Mr. Bowyer.

Quick Update & Praise!

Praise the Lord! Kaden Eli Denny went home this morning. Out of NIC unit and home with his mom and dad. He is doing so good and I am going to see him tomorrow. Thank you for all the prayers!

Yuri Weekend with the Girls!

The week has been busy and with all the other things going on in our lives, I have not had a chance to post about the Yuri Weekend with the Girls. Jenn and I planned a trip for Yuri as a final girls weekend away before she leaves for Asheville. We invited some of the ladies who we feel have been closest to Yuri over the years she has lived here.

We must give a BIG THANK YOU to Diane and Brenda for the accommodations.

We made some special gift bags for Yuri and included some of her favorite things in each bag. Each bag had a letter on the front and when completed spelled out Asheville. All the ladies contributed to the gifts and we hope Yuri finds enjoyment in her special things.

A = After the Boxes are Unpacked book that she can read and enjoy.
S = Stamps for writing letters to all of her friends back home...we expect a weekly letter!

H = Home, a pig ornament to represent her home in Davidson County (BBQ County)

E = Enjoy living close to Goodwill. She received Goodwill Dollars to spend in Asheville (there are several Goodwill Stores in Asheville that Yuri has already scoped out)

V = Vixen Nails. She will need manicure after she finishes getting her home here ready to sell. (Yuri, we have some painting for you to do)

I = Indulge yourself in chocolate to help with the stress of moving. We gave her some of her favorite candy..ex M&Ms, dark chocolate, Hersheys & Dove.

L = Look like a Local in Asheville. (a tied shirt with peace on it and hippie skirt) She'll fit right in with the mountain locals!)

L = Letters to your friends. (Personalized Note Cards) No excuses not to write!

E = Everyone loves you here and will miss you dearly. (a friendship frame with our picture of our girls weekend together)
We all did have a wonderful time of fellowship together and enjoyed some much needed rest and relaxation.

All the updates and News!

Wanted to give an update on Kaden. He remains in the NIC unit but is progressively getting stronger. He is nursing now with breast milk that Katelyn is pumping and they are giving it to him through a syringe. He is breathing much better and is now completely off any assistance in breathing. They have taken the feeding tube out today and are going to try allowing her to breast feed him this evening. He is still not completely able to leave the unit so they are going to keep him in the NIC unit again tonight and see how well he continues to progress. Pray that he will continue to gain strength so that he may come out of the NIC Unit and come home.

Katelyn is being discharged today but they are going to give her a parent room near the NIC unit so she can breast feed Kaden. She does not want to leave him and I cannot blame her for feeling this way.

I'll continue with other updates and news. I lost 1.6 lbs yesterday and hit a milestone. I have lost a total of 50.2 lbs now and I received another symbol for my key chain. It is a barbell weight and is has the number 50 on it. I will look at it each morning to remind me of how far I've come in my journey. I have 32 lbs more that I want to lose so please continue to pray for strength for me. I am more than 1/2 way there.

Here is the recipe for this week. I have made this on several occasions and my family loves it.

Crusted Honey Mustard Chicken
1 spray cooking spray
2/3 cup lite honey mustard dressing
1/8 tsp table salt
1/8 tsp black pepper
2 tsp fresh chopped dill
1 medium scallion finely sliced
1 cup of cornflake crumbs (crushed fine)
1 pound of uncooked boneless chicken breast 4-4oz pieces.
Preheat oven to 425 degrees. Coat a shallow pan with cooking spray. (I like to use my stoneware for this recipe)
In a small bowl, combine honey mustard dressing, salt, pepper, dill, and scallions. Remove 1/3 cup and set aside.
Place cornflake crumbs in a shallow bowl. Dip chicken into dressing mixture and then cornflake crumbs; place in prepared pan.
Bake until chicken is golden and no longer pink in center. (approx. 20 minutes).
Drizzle remaining 1/3 cup of dressing that was set aside over chicken breasts and serve.
I serve mashed potatoes (using 1% milk, red potatoes, and light margarine) and green peas with our meal. If you must have bread (like my husband) there are reduced fat crescent rolls or reduced fat biscuits that you can make.
WW points for chicken is 7 per serving.
Renee, I wanted to let you know I found a low fat version of the cinnamon cream cheese dessert you made for our trip. Here is the low fat version:
Cinnamon Cream Cheese Dessert
16 oz or 2 tubes of reduced fat crescent rolls
16 oz or 2 containers of fat free cream cheese softened
3/4 cup of splenda
1 tsp vanilla
1 large egg yolk (keep the white)
spray butter
2 tbsp ground cinnamon
1 tbsp of splenda
Preheat oven to 350 degrees. Press one roll of reduced fat crescent rolls into 9 x 13 pan sprayed with Pam cooking spray.
Mix egg yolk, cream cheese, splenda, and vanilla. Pour over rolls.
Sprinkle 1 tablespoon of cinnamon across mixture.
In bowl, mix 1 tablespoon of cinnamon and 1 tablespoon of splenda. Place remaining crescent roll on top of mixture. Brush top with beaten egg white. Lightly spray with spray butter. Sprinkle remaining cinnamon/splenda mixture on top.
Bake 30 minutes. Makes 15 servings. WW points: 2 pts per serving.
Option: Another way to add some more flavor; after pouring cream cheese mixture on top of first layer of crescent rolls, dump one can of sugar free cherry pie filling. This will add 1 pt to your serving for a total of 3 pts per serving.
