I know some of you will look at this photo and ask yourself, "who is that guy standing next to Angie?" Well, for me, this photo has a lot of meaning and purpose behind it. You see, I am a BIG FAN of the television show, "The Biggest Loser." I watch it each week and it has given me much needed inspiration in my journey of weight loss. I also have "The Biggest Loser Family Budget Cookbook" and love the recipes that are budget friendly. I will post some of these on my weekly recipe post.

Anyway, getting back to the photo. Some friends and I went to dinner at Chili's Restaurant on Friday night after the play at Union Grove Christian School. I was one of the last people to walk in the restaurant to meet my friends. Jeremy told me when I walked in the door that one of Nascar's race car drivers was in the restaurant. He said, "Angie, that is Clint Bowyer sitting over there at that table with those other folks." I was not sure so Jeremy pointed him out to me and I responded with, "no way, that's not Clint Bowyer." But Jeremy was insistent and even told me to walk over to the table and ask him. I did not want to interrupt and I told Jeremy that I could not do it. After much prompting and coaxing from the rest of the gang (yes, I gave into peer pressure), I walked over to the table and very apologetically asked him if he was indeed Clint Bowyer. He responded with, "yes ma'am, I am." Now, I am not a big Nascar fan and watch very few races or follow the stats, but I am a Biggest Loser fan, and on the last episode of The Biggest Loser, Clint Bowyer made an appearance. He gave the contestant that won the challenge a ride around the race track with some spin outs and she also received a trip & tickets for a race. Tara won the challenge and to see clips go to www.nbc.com and see the Biggest Loser or look at the widget on my blog. I watched the show and it was neat to see Clint Bowyer giving Tara the ride around the track. It was a big motivator especially because Tara came back from a 5th place standing to pass the other 4 contestants to win the challenge. Here's my "claim to fame" photo.

Mr. Bowyer asked me how much weight I had lost and I told him I had just topped the 50lb mark and he shook my hand and told me to keep up the good work. It was an inspiring evening and I'm glad I had the opportunity to meet Mr. Bowyer.

Quick Update & Praise!

Praise the Lord! Kaden Eli Denny went home this morning. Out of NIC unit and home with his mom and dad. He is doing so good and I am going to see him tomorrow. Thank you for all the prayers!

Yuri Weekend with the Girls!

The week has been busy and with all the other things going on in our lives, I have not had a chance to post about the Yuri Weekend with the Girls. Jenn and I planned a trip for Yuri as a final girls weekend away before she leaves for Asheville. We invited some of the ladies who we feel have been closest to Yuri over the years she has lived here.

We must give a BIG THANK YOU to Diane and Brenda for the accommodations.

We made some special gift bags for Yuri and included some of her favorite things in each bag. Each bag had a letter on the front and when completed spelled out Asheville. All the ladies contributed to the gifts and we hope Yuri finds enjoyment in her special things.

A = After the Boxes are Unpacked book that she can read and enjoy.
S = Stamps for writing letters to all of her friends back home...we expect a weekly letter!

H = Home, a pig ornament to represent her home in Davidson County (BBQ County)

E = Enjoy living close to Goodwill. She received Goodwill Dollars to spend in Asheville (there are several Goodwill Stores in Asheville that Yuri has already scoped out)

V = Vixen Nails. She will need manicure after she finishes getting her home here ready to sell. (Yuri, we have some painting for you to do)

I = Indulge yourself in chocolate to help with the stress of moving. We gave her some of her favorite candy..ex M&Ms, dark chocolate, Hersheys & Dove.

L = Look like a Local in Asheville. (a tied shirt with peace on it and hippie skirt) She'll fit right in with the mountain locals!)

L = Letters to your friends. (Personalized Note Cards) No excuses not to write!

E = Everyone loves you here and will miss you dearly. (a friendship frame with our picture of our girls weekend together)
We all did have a wonderful time of fellowship together and enjoyed some much needed rest and relaxation.

All the updates and News!

Wanted to give an update on Kaden. He remains in the NIC unit but is progressively getting stronger. He is nursing now with breast milk that Katelyn is pumping and they are giving it to him through a syringe. He is breathing much better and is now completely off any assistance in breathing. They have taken the feeding tube out today and are going to try allowing her to breast feed him this evening. He is still not completely able to leave the unit so they are going to keep him in the NIC unit again tonight and see how well he continues to progress. Pray that he will continue to gain strength so that he may come out of the NIC Unit and come home.

Katelyn is being discharged today but they are going to give her a parent room near the NIC unit so she can breast feed Kaden. She does not want to leave him and I cannot blame her for feeling this way.

I'll continue with other updates and news. I lost 1.6 lbs yesterday and hit a milestone. I have lost a total of 50.2 lbs now and I received another symbol for my key chain. It is a barbell weight and is has the number 50 on it. I will look at it each morning to remind me of how far I've come in my journey. I have 32 lbs more that I want to lose so please continue to pray for strength for me. I am more than 1/2 way there.

Here is the recipe for this week. I have made this on several occasions and my family loves it.

Crusted Honey Mustard Chicken
1 spray cooking spray
2/3 cup lite honey mustard dressing
1/8 tsp table salt
1/8 tsp black pepper
2 tsp fresh chopped dill
1 medium scallion finely sliced
1 cup of cornflake crumbs (crushed fine)
1 pound of uncooked boneless chicken breast 4-4oz pieces.
Preheat oven to 425 degrees. Coat a shallow pan with cooking spray. (I like to use my stoneware for this recipe)
In a small bowl, combine honey mustard dressing, salt, pepper, dill, and scallions. Remove 1/3 cup and set aside.
Place cornflake crumbs in a shallow bowl. Dip chicken into dressing mixture and then cornflake crumbs; place in prepared pan.
Bake until chicken is golden and no longer pink in center. (approx. 20 minutes).
Drizzle remaining 1/3 cup of dressing that was set aside over chicken breasts and serve.
I serve mashed potatoes (using 1% milk, red potatoes, and light margarine) and green peas with our meal. If you must have bread (like my husband) there are reduced fat crescent rolls or reduced fat biscuits that you can make.
WW points for chicken is 7 per serving.
Renee, I wanted to let you know I found a low fat version of the cinnamon cream cheese dessert you made for our trip. Here is the low fat version:
Cinnamon Cream Cheese Dessert
16 oz or 2 tubes of reduced fat crescent rolls
16 oz or 2 containers of fat free cream cheese softened
3/4 cup of splenda
1 tsp vanilla
1 large egg yolk (keep the white)
spray butter
2 tbsp ground cinnamon
1 tbsp of splenda
Preheat oven to 350 degrees. Press one roll of reduced fat crescent rolls into 9 x 13 pan sprayed with Pam cooking spray.
Mix egg yolk, cream cheese, splenda, and vanilla. Pour over rolls.
Sprinkle 1 tablespoon of cinnamon across mixture.
In bowl, mix 1 tablespoon of cinnamon and 1 tablespoon of splenda. Place remaining crescent roll on top of mixture. Brush top with beaten egg white. Lightly spray with spray butter. Sprinkle remaining cinnamon/splenda mixture on top.
Bake 30 minutes. Makes 15 servings. WW points: 2 pts per serving.
Option: Another way to add some more flavor; after pouring cream cheese mixture on top of first layer of crescent rolls, dump one can of sugar free cherry pie filling. This will add 1 pt to your serving for a total of 3 pts per serving.

Update on Kaden Eli Denny

March 25, 2009

Kaden remains in the NIC Unit and there has been no change. His body temperature remains abnormal and his sugar is low. They still have him on the ventilator and the feeding tube. He is doing well though and the doctors say that he is definitely a strong fighter. Katelyn and Devin were able to visit with him yesterday for 30 minutes at a time and she said he immediately recognized her voice on the first visit and opened his eyes. Please continue to pray for him and for his parents.

Weekly Recipe and Weight loss Post!

Today was weigh in and I lost another 2.2 lbs. I gave thanks immediately to God for giving me strength throughout my Gatlinburg weekend. I had several people ask me what I ate on the trip in order to still lose weight so I'll give you a short summary: Breakfast was usually a Fiber One bar and some type of fruit. Lunch on Friday was grilled chicken skewers with green peppers and onions, sweet potato, and salad with low fat dressing. I also ate 1/2 of a yeast roll. Dinner Friday was 3 soft chicken tacos (no sour cream) and some refried beans. (I splurged a little). I had coffee later that evening but no dessert. Saturday lunch was Grilled cedar plank talipia, steamed broccoli, salad with low fat dressing and 1/2 of a yeast roll. Later that evening we went by Starbucks and I had a skinny cow caramel latte and a reduced fat cinnamon coffee cake (I could not believe Starbucks had a reduced fat dessert and it was absolutely delicious)! I was not really hungry after splurging on the coffee cake so for dinner, I ate some fat free kettle popcorn, a pack of reduced fat peanut butter crackers, and some fruit. I worked out on the treadmill twice while we were away so I managed to get some exercise in as well. I had a good time and still managed to stay within my points.

I am going to publish 2 recipes this week, one for turkey burgers that has been requested and one dessert to show folks that you can eat desserts with less calories that still taste great. Okay, Andrea, this is the part of my blog where you may stop reading and start drinking those protein shakes. (ha ha)

Turkey Burgers

1 lb of lean ground turkey (93% lean preferably)
1 tablespoon onion flakes
1/4 cup of egg beaters (whites only)
1/4 cup of Progresso Panko bread crumbs (plain)
1 tsp of garlic powder
1 tsp pepper
In bowl, mix ground turkey, onion flakes, egg beaters, bread crumbs, garlic powder, and pepper.
Pat out in (4) 4 oz. patties. Grill 10 minutes on each side or until done.
Note: If you want your burgers with a little more moisture, spray bottom of non stick pan with olive oil cooking spray and cook burgers on med. high covered until done on both sides. This allows some of the juices to stay around the burger. You can take them out and place them on a paper towel before you put them on a bun.
Serving suggestions: I buy a new product from Arnolds called Sandwich thins. You can buy these at WalMart at the deli area in front of the counter. They come 8 in a pack and you can buy them in white, wheat, rye or multi grain. They are Awesome! I spray a little I Can't Believe Its Butter Spray on each side of the sandwich thin and grill or toast the top of it until light brown. I add my turkey burger, 1 Tbsp. reduced fat mayonnaise, lettuce, tomato, and pickles. Yum Yum!
(My husband throws a few jalapenos peppers on his and sometimes we add salsa)
Weight Watcher points for burger only is 5. Sandwich thins is 1. Hellman's reduced fat mayonnaise 0 Points. Total WW points = 6.
I serve mine with sweet potato fries and fresh mixed fruit.
Devine Strawberry Cake
1 box of yellow cake mix (dry)
1 12 oz can of Diet 7 up or Diet Sprite
2 small boxes of sugar free strawberry jello
2 cups of water
1 cup of fresh cut strawberries
1 1/2 tsp of splenda
1 8 oz container of sugar free cool whip
In bowl mix dry cake mix and 12 oz. can of diet 7UP or diet sprite. Spray 9 x 13 pan with cooking spray. Pour batter in pan and bake according to directions on cake box.
When cake is done, set aside to cool. Allow cake to cool to room temperature. Mix in bowl 2 small boxes of sugar free strawberry jello and 2 cups of boiling water. Poke holes in top of cake and pour jello mixture over cake. Cover cake with saran wrap and refrigerate. Cut fresh strawberries up in bowl. Add 1 1/2 tsp of splenda and allow strawberries to sit in refrigerator for approximately 30 minutes. Take cake and strawberries out and spread strawberries over top of cake. Whip cool whip with wire whisk and spread over top of strawberries and cake. Makes 20 servings. Weight Watcher points: 3 pts per serving.
I have also used a mixture of raspberries & strawberries and blueberries. You can get creative with this cake so experiment a little.

Ladies Conference in Gatlinburg, TN

This past weekend some of the Ladies from our church attended the DARE FOR MORE conference in Gatlinburg, Tn. I was blessed to have heard some great speakers and the Lord was glorified throughout this conference in song and praise.


When we first arrived in Gatlinburg on Friday, we checked in our rooms and then were left to do as we chose until conference time that evening. A few of us walked downtown and did some shopping. Afterwards, we grabbed a nice dinner at a quaint little Mexican restaurant across from the conference center. Jennifer Grogan introduced me to a great healthy dish, called Ceviche, which I will definitely order the next time I dine at a Mexican restaurant.

The conference center was very nice and big. The ladies of Union Grove all had red t-shirts with Union Grove Baptist Church and "Praising Him in the Storm" on them, (thank you Kim) and we wore these in support of Tiffany Pollard who was one of the speakers for this conference. Tiffany did a fantastic job and we are so proud of her. The Lord is using her to reach others in storms of their own. We are praying for you Tiffany. Reba Bowman brought the message for Friday night and read from Mark 4: 35-41. She spoke of the storm and how when the storm came, Jesus was asleep somewhere in the boat, and the disciples were very afraid and could not understand why Jesus was not saving them. They even had to shake him to wake him up and get his attention. Jesus did not get up and act excited or afraid about the situation even when the boat filled with water and the storm raged. Jesus knew the storm was there and he knew what he would do. He wanted them to see that he was in control of every storm and that every storm is directed by him. Jesus responded with peace be still and he rebuked the wind. He even asked, "why are ye so fearful?" "How is it that ye have no faith?"

Reba Bowman spoke from Acts 27. The apostle Paul was on a ship on his way to be tried for preaching the Gospel. A storm (hurricane) came up and on Day 1, they secured the ship and prepared it to withstand the storm. Day 2, they began throwing things overboard that were not needed. Day 3, they started throwing essential things of the ship overboard, things they would need but knew they had to throw overboard to lighten the ship from sinking. Day 4 there was no stars and no hope. Paul disappeared and went to spend time alone with God. Paul comes back and tells everyone on the ship to "Be of Good Cheer." He tells them that the Lord sent an angel to him to let him know that no one would die. Again, the Lord is in complete control of the storms in our lives if we will just have the faith that he is God and can do anything. He is more powerful than any storm in our lives. Even after they lost the ship and were shipwrecked on the island with the natives, God used Paul to preach the Gospel of Jesus Christ to the natives after he was bitten by a snake that should have killed him. God saved his life to minister to the natives and soldiers. God wants to use each and every one of us!

On Saturday morning, there were a couple of ladies to speak. One was a young lady by the name of Kelli, who as a teenager had lost one of her legs in a boating accident. God used the storm in her life to minister to other amputees. One of the amputees that she ministered to was a young man by the name of Jordan Thomas. He had suffered the loss of both legs in a boating accident and she had ministered to him and his family during this storm. Later in her life, Kelli went on to marry and have one child. She became pregnant with her 2nd child and at her 20 month ultrasound, they were told that their daughter would have Downs syndrome and a birth defect where the esophagus is not connected to the stomach. She admitted to us that she had questioned whether she could ever love this child or take care of this child. She said just because we are Christians does not mean that we do not get angry and hurt. On June 12th, her daughter, Claire was born with Downs syndrome and esophageal detachment. She was in the hospital for over 200 days. At 4 1/2 months old, they did a surgery to correct the defect and complications arose after surgery. The doctors gave Claire less than 24 hours to live. Kelli's testimony showed God's perfect timing during the storm when a female doctor by the name of Liz Kennedy came to Kelli and told her that she believed that Claire could still be saved. She was not ready to give up on Kelli's daughter as the other doctors were. She told Kelli there were surgeries that could be done but they were also very dangerous and could take Claire's life. Kelli and her husband prayed and gave their daughter over to God. The surgeries were a success and Claire is 2 years old now. The doctor that was not ready to give up on Claire was the mother of Jordan Davis, the amputee that Kelli had ministered to many years ago. What an awesome God we serve!


Later that afternoon, they had a drawing from a basket and Patty Fletcher won a very nice prize. It was a Coffee Maker with lots of coffee goodies. As you can see, Staci, Patty's daughter is in the picture because Patty is giving the present to Staci as part of Staci's wedding present. Patty is so sweet and a wonderful mother!


The other lady to speak was Sue White and her testimony impacted my life the most. Sue testified about her wayward son and how she had prayed for him for 40 years. Her son had grown up going to a christian school and attending church. He had made many professions of faith in Christ but as he became a teenager and adult, his life took a different turn. He married and became involved in drugs and alcohol. He lost his wife, his business, and was arrested for selling drugs. His life was in ruins but through someone else inviting him to church, he surrendered his life to Christ and was truly transformed. After his transformation, he asked his mother one day if she loved God. She responded with a yes. He then asked her if she really loved God and she responded yes. He then asked her why. She said because he saved you. He then turned to his mother and asked, "why can't you love God because he saved you?" Sue said that she realized her home had been a church-centered home but not a Christ-centered home. She had failed to show the true depth of love that she had for Jesus Christ. She went to church and was very active in her church but did not show a true heart of worship & love in her home for Christ.
As Christians, we must be transparent so that others can see the love of Christ in our lives. There are many people hurting, weathering storms of their own but we can't reach them unless they see Christ in us!
The last message that Reba Bowman brought to us was that we as Christians can sing in the rain!
She took us to Habakkuk Chapter 3. She defined what the word Shigionoth means: tempo of a song meaning wild passionate song, sung with great excitement. She defined the word Selah meaning to pause (heightening of the musical accompaniment when the words pause and the singer meditates). We can praise him during the storm! We should praise him during the storm!
We must pray during the storms. She gave us 4 things to remember in our rejoicing:
1. God is our salvation.
2. God is our strength.
3. God has made us sure-footed in dangerous places.
4. God has made us to walk in high places.
No situation is to hard for God! He controls our time and our days! We worship whom we trust and trust whom we know! God is good all the time. All the time God is good!

Weekly Recipe from Angie's Kitchen

I did not want to leave tomorrow and miss the opportunity to post another WW recipe. You may ask "if it is a weight watchers recipe, then why title your post, Weekly Recipe from Angie's Kitchen?" Glad you asked. On the weight watchers e-tool, you can modify any current version of a recipe that you may have to a weight watchers recipe so that you are cooking the same recipe but with less calories and fat. This week I am posting a recipe that we put together in our kitchen one night and has now become one of our favorite weekly meals. Even if you are not watching your waist line, I believe you might enjoy this altered version to the traditional pizza.

Tortilla Pizza
1 Mission Carb balance flour tortilla
2 tbsp. of Ragu Pizza Sauce
1/4 c chopped green peppers
1/4 c chopped onion
1/4 c sliced mushrooms
1 tsp. Italian seasoning
2 oz of Kraft 2% Mexican cheese mix or reduced fat cheese
8 slices of Hormel Canadian bacon (small round bite size)
salt & pepper to taste
Preheat oven on Bake to 400 degrees.
Place flour tortilla on cutting board. add 2 tbsp. of pizza sauce. add Italian seasoning.
layer with Canadian bacon, green peppers, onions, mushrooms, and cheese.
Place flour tortilla directly on center of oven rack.
bake at 400 degrees for 8-10 minutes until tortilla slightly crisp.
add salt & pepper or crushed red pepper.
This makes a wonderful meal with a house salad and reduced fat dressing. I will serve corn on the side as well or add a bowl of mixed fresh fruit.
On weight watchers, the pizza is 7 points. You can also substitute the Canadian bacon with 2 ounces of cooked ground turkey or turkey pepperoni slices.

How is Failure Measured?

I don't have much time so I am going to make this one quick. Weigh in today was awesome! I lost 6.8 pounds. I was astounded but very thankful. God is Good! I tracked this week, exercised, and stayed on course. The most crucial part of my week was last Wednesday when I left weigh in. I was very discouraged because I had gained and the pessimistic side of me (the little negative voice that makes it appearance every now and then) said, "you are a failure at this." But as I was driving down the road that same day, I heard a discussion on WBFJ radio that got my attention. They were speaking on the topic of successes and failures in life and how we judge them as individuals. A man called in and I will forever remember his words. He said, "I don't judge my failures by the amount of times I fall, but the amount of times I do not get back up." This spoke volumes to me. Its so amazing how God knows exactly what we need and when we need it. He gave me the words when they were needed most to encourage me and to lift me up. What an Awesome God we serve!

Real Rachael Meets Baby Rachael

Tonight Rachael got to meet her namesake Baby Rachael. Claire named her new doll after my Rachael. My Rachael was flattered that Claire chose to name her special baby after her.

McKinley has been slack and is sitting here now trying to finish a book report that is due on Monday. He will be up most of the night but of course he only has known about this book report for 1month. He has just given an excuse that he did not have the needed paper to complete this report. Excuses, excuses - just get it done! Nothing like waiting until the last minute to get something done. Rachael just completed hers last night just under the wire. Oh, the fun Kim has to look forward to with Claire.

It has been a good day spent worshiping our Lord and Saviour and good times with friends.

Late but still here!

Sorry it has taken me so long to post. Once again I am failing miserably at blogging. I have good intentions but that is about as far as I get. I'll start off with letting everyone know my weight loss for last week's weigh-in. I lost 2.6 lbs and yesterday when I arrived at weigh in, I had gained 1.6 pounds. So for the 2 week period, I lost 1 pound. Not a lot and I'm not overly excited about just losing the 1 pound for 2 weeks but I am trudging through the "mental block" I have in my head and moving forward for this next week. I am back on track and I literally mean, "back on track". In WW, one of the key points is to "track". You must track your points daily. This past week I did not do so well on tracking. I was not eating bad foods, I simply did not track my points and therefore, I over indulged in my points allowance. On the same WW note, I've had several people ask me about my cooking while on WW. Several of our church members have inquired as to what I am eating and how I come up with the different recipes that I fix. I actually belong to the WW e-tools, therefore, I get access to the online material which includes recipes, food shopping tips, and recipe builders. You can enter any recipe you may have at home and the recipe builder will give you helpful low fat substitutions that will decrease the calories and fat in the recipe. It will also tell you what the new point value is for the new reduced WW recipe version. I absolutely love this tool. I realize that not everyone belongs to WW and that's okay. I just want to be able to share the things that I've learned along the way in my family's journey to better health. So, with that said, I have decided that each week I will post a recipe from my own WW cookbook. Feel free to input any suggestions.

Creamy Stuffed Chicken Breast
4 skinless boneless chicken breast
1 package 8 oz peppridge farm chicken stuffing mix
10 oz of fresh steamed broccoli chopped
1 cans of fat free cream of chicken soup condensed
1/2 cup of 1 % milk
4 tbsp of reduced fat Parmesan cheese
2 tbsp of paprika
1/4 c of water for stuffing
1 tbsp salt
tbsp black pepper
Directions: Beat chicken breast flat. In bowl, mix dry stuffing mix, 1/4 c water, and steamed
chopped broccoli. Add 2 heaping tablespoons of stuffing/broccoli mixture to each chicken
breast and roll chicken breast up and place chicken in 9 x 13 in casserole dish with seam side
of chicken down in casserole dish. In same bowl, mix can of fat free cream of chicken soup and
1/2 cup of 1% milk. Stir well and pour over chicken. Sprinkle Parmesan cheese and paprika
over top of chicken. Add salt & pepper. Bake at 375 degrees for 40 minutes. Serves 4

This is a great recipe and everyone in my family loves this. I serve it with mashed potatoes and something green (ex..salad, green beans). Pillsbury now makes the reduced fat crescent rolls and one roll is 2 points. I make my mashed potatoes using the red potatoes, skim milk or 1% milk and country crock light margarine. Each 1/2 cup serving is 2 points.
