I did not want to leave tomorrow and miss the opportunity to post another WW recipe. You may ask "if it is a weight watchers recipe, then why title your post, Weekly Recipe from Angie's Kitchen?" Glad you asked. On the weight watchers e-tool, you can modify any current version of a recipe that you may have to a weight watchers recipe so that you are cooking the same recipe but with less calories and fat. This week I am posting a recipe that we put together in our kitchen one night and has now become one of our favorite weekly meals. Even if you are not watching your waist line, I believe you might enjoy this altered version to the traditional pizza.
Tortilla Pizza
1 Mission Carb balance flour tortilla
2 tbsp. of Ragu Pizza Sauce
1/4 c chopped green peppers
1/4 c chopped onion
1/4 c sliced mushrooms
1 tsp. Italian seasoning
2 oz of Kraft 2% Mexican cheese mix or reduced fat cheese
8 slices of Hormel Canadian bacon (small round bite size)
salt & pepper to taste
Preheat oven on Bake to 400 degrees.
Place flour tortilla on cutting board. add 2 tbsp. of pizza sauce. add Italian seasoning.
layer with Canadian bacon, green peppers, onions, mushrooms, and cheese.
Place flour tortilla directly on center of oven rack.
bake at 400 degrees for 8-10 minutes until tortilla slightly crisp.
add salt & pepper or crushed red pepper.
This makes a wonderful meal with a house salad and reduced fat dressing. I will serve corn on the side as well or add a bowl of mixed fresh fruit.
On weight watchers, the pizza is 7 points. You can also substitute the Canadian bacon with 2 ounces of cooked ground turkey or turkey pepperoni slices.
